This dessert consists of green corn dough sweetened with sugar or condensed milk and cooked wrapped in the corn husk, in a pan with water. The mush from Minas is prepared without any flour, eggs, milk or any other ingredient commonly used in the preparation of sweet dishes.

Ingredients for making green corn mush in a blender:

 8 ears of corn with straw

 1 can of condensed milk (397 g)

 1 pinch of salt

 Minas cheese to taste (optional)

How to make green corn mush in a blender:

Making homemade sweet mush is very simple and doesn't require many ingredients! Start by removing the corn husk (the leaves around the ear), as they will be used to prepare this traditional dessert. To do this, make a deep cut around the top of the cob, using a sharp knife, without separating the corn kernels.

Tip: Choose corn in the right spot: not too soft and white, not too hard and yellow. The corn hair needs to be glued to the cob, if it comes loose easily means that the corn is already over the point.

Remove the corn leaves (straw) one by one, being careful not to break them. Discard the external straws, which will be dirty and bruised, and also those that are very close to the ear, as they will be small - the ideal is to use the larger straws to make the mush wrapping. After that, clean the cobs thoroughly, removing the hair.

The next step of this homemade mush is to separate the corn from the cob. For this you can use a sharp knife or grate the corn in an upright position. You can also lean on a hand mill.

Tip: Do not cut or grate corn kernels too close to the cob to avoid hard pieces.

When you've peeled all your corn, place the beans in a blender and add the pinch of salt and condensed milk. Beat well until dough is very soft but firm at the same time. It is also okay if, at this point, the dough becomes too sweet because it will be cooked in water and will lose some of that sweetness.

Tip: Salt helps to intensify the flavor of corn, so be sure to add it!

Start to mold the muffins: take one of the corn husks and place a portion of the beaten corn mass in a blender and also a slice of Minas cheese, if you wish. Fold the underside of the straw towards the filling and fold the sides to the middle as well, so that you get a "cup".

Tip: If the straw is hard, you can boil it to make it a little soft. After wrapping, place the mussels vertically to prevent them from opening, or tie them with string.

Arrange the muffins in a pan with a little water at the bottom or in a pan suitable for bain-marie. Cover with straw and corncobs, to cover, and cook on medium heat for 1 hour or until you see that the filling separates easily from the straw.

Tip: Don't stir the mush while they cook in the pan, or the stuffing will leak.
