Homemade ice cream

The recipe that I share today is for some delicious and refreshing frozen alfajores. Alfajores are cookies that melt in your mouth and are very popular in Latin America, especially in countries like Argentina and Peru.

The version that I share from Dulce Isis, are homemade alfajores with a frozen filling that make this dessert an ideal one for the summer months.

Follow this original recipe carefully and indulge yourself by eating a new version of the famous Argentine alfajores. Enjoy!

Ingredients to make homemade ice cream Alfajores:

 70 grams of granulated sugar

 100 grams of Margarine or butter at room temperature

 1 egg

 300 grams of unprepared wheat flour

 1 tablespoon of Cocoa

 1 teaspoon of baking soda

Ice Cream Filling

 375 millilitres of condensed milk

 500 millilitres of whipping cream or cream

Cover

 150 grams of Chocolate covered bitter

 60 grams of Margarine

 Candy sprinkles

How to make homemade ice cream Alfajores:

The first thing we will do is the cookie part. Then to prepare the dough for the alfajores, we beat the butter or margarine with the sugar in a bowl, until a smooth cream is formed.

Then add the egg and continue beating until it is well integrated into the mixture.

To finish with this homemade cookie dough, add the rest of the dry ingredients (flour, bicarbonate, cocoa) previously sifted and mix the whole, beating at low speed, just to integrate.

Once all the ingredients are well integrated, a compact dough will form. We cover it with plastic wrap as seen in the photo and we take it to rest in the refrigerator for 2 or 3 hours.

After this time, we take the dough out of the refrigerator and stretch it with a rolling pin to then cut the caps of the alfajores with cookie cutters.

The alfajores are round by tradition, but if you prefer to give them another shape you can do it using other cookie cutters.

We place them in a buttered and floured baking tin and take them to bake in the oven preheated to 180 ° C, for approximately 18 minutes.

When they are ready, we let them cool to room temperature on a wire rack.

Now we are preparing the filling for our frozen alfajores. To do this, beat the whipping cream in a bowl until it forms peaks.

Tip: To beat the cream it is advisable to do it in a bowl that we have put in the refrigerator for an hour so that it is very cold when it comes to whipping the cream.

When the cream is hard, we must add the condensed milk little by little and beat it in an enveloping way so that the cream does not fall. Reserve in the refrigerator until we are going to fill the homemade alfajores alfajores.

Condensed milk is very easy to make, if you want to try it you just have to follow the recipe for homemade condensed milk.

Now that we have the cookies and the filling ready, we proceed with the assembly of the frozen alfajores. Start by cutting strips of acetate approximately 5 centimetres wide to be able to wrap the alfajor caps as seen in the photo.

Secure them with masking tape.

Tip: Acetate is a type of plastic. Use whatever type of plastic sheeting you have available.

To place the filling, pour our milk cream mixture on top.

Finally, cover with another capita of alfajor and put in the freezer for approximately 3 hours or from one day to the next.

Repeat the procedure until you finish with all the cookies. With this amount of ingredient, you should be able to prepare between 8 and 10 frozen alfajores.

On the day of the presentation of our frozen alfajores, we can make a chocolate coating. This step is optional, but it will undoubtedly give our dessert a lot of personalities, in addition to offering us a much more delicate presentation.

To make it, we melt the chocolate with the margarine in the microwave and dip half of each frozen gingerbread in the chocolate.

Finally, sprinkle with caramel chips and voila, let them cool in the fridge so that the chocolate in the coating solidifies and we can now enjoy an exquisite bite of frozen alfajores.
